  • Page 3Twelve years ago, after attending a morning meditation, I drove to my University and spent two hours reading prayers in my car before my class would start. It was a dark and cold winter morning. I clearly recall leaving my car, and turning back and realizing that I had left the headlights on for the entire two hours while I was sitting in the parking lot. I said an "uh oh", went back to the car, turned off the lights, and decided that if the car doesn't start after class, it will be a problem I'll have to deal with later. After my classes were over, I walked back to my car. I put the key in the ignition and my hunch was correct. It didn't start. I will admit that as a nov- ice driver, I did not know many basics about driver prepared- ness-including keeping jumper cables in the car.

It made me feel okay tak- ing a chance bringing all of my stuff to their 'front door', 'un- announced', 'without confirma- tion'. An hour later I was nearly about to exit the stadium in "defeat" with my wagon of *"What's your product?" "My book"* when Ellen ran into me after returning back to the stadium. I was originally told by anoth- er person it wasn't possible for me to be a vendor. It was Ellen and a volunteer named Frances who helped secure a site for me after I finally did the rest of the necessary registration steps. "I knew we met for a reason," she said. And then it was an ad- ditional volunteer and RCMP officers who offered to help me raise my tent. (I came to the fes- tival all by myself.) It was also a volunteer named Kim who was so kind to have told me earlier that although I *couldn't* ven- dor that year, I should give my book to Alliance Philippines who teaches Tagalog to kids. It was Corrina's kindness that had her offer to put my book into their rotation for use for their classes.

Mango Dessert

  • RECIPE
  • Serves 4
  • Ingredients
  • 3 ripe mangoes, peeled and pitted
  • 2 cups sweetened condensed milk
  • Juice of 1 lemon

1 cup raspberries (fresh or frozen optional)

1/4 cup orange juice

4 tablespoons chopped pistachios

Instructions

In a small bowl, combine the raspberries with the orange juice and let them marinate while you're preparing the mango mixture. Place the mangoes, sweetened condensed milk, and lemon juice in a blender. Blend until smooth and creamy.

Divide half of the mango mixture evenly among four dessert dishes. Spoon about 3/4 cup of the marinated raspberries evenly over the mango layer, then top with the remaining mango mixture. Refrigerate for several hours, or until well-chilled.

Just before serving, garnish with the remaining raspberries and sprinkle with chopped pistachios.

This chilled mango dessert is an ideal antidote to the heat, combin- ing high-water-content fruits like mangoes and raspberries to keep you naturally hydrated and refreshed. From a nutritional standpoint, the dish is a powerhouse of vitamins A and C, antioxidants, and dietary fiber, which support immune health and digestion. The ad- dition of pistachios provides heart-healthy fats and essential min- erals like potassium and magnesium to aid muscle function, while citrus juices offer a bright, tangy finish. However, while the natural fruit sugars and sweetened condensed milk provide a quick energy boost, the dessert's high sugar content is a notable drawback for those monitoring their intake so please eat moderately. Ultimately, its ability to be served cold makes it a soothing, nutrient-dense treat for summer gatherings, successfully balancing indulgence with functional health benefits.

Sugar Replacement Optional:

Condensed Milk With Evaporated Milk

For those who are watching their sugar intake try using Evaporated Milk instead! Because sweetened condensed milk and evaporated milk are similar in consistency, evaporated milk is a great substitute for condensed milk. Downside is you won't get that sweet cara- mel flavour but luckily you have the option to adjust the amount of sugar in your recipe to make up for the lack of sweetness. A sugar
